Homemade Dishes - Kerala Sadya Course & Nutrition

Sadya Course Order

                         

  • Sadya starts with Parippu curry, Ghee and Pappad with Rice.
  • Continue the course with Sambar, Rice and side dishes – Pachadi, Erissery, Avial and  Thoran.
  • After Sambar, Rice with Kalan and side dishes- Olan, Kichadi and Pappad.
  • Next in the course order comes Rasam with Rice and side dishes – Thoran and Koottukari.
  • Then comes; the dessert – Payasam/Pradhaman and Pappad.
  • After dessert comes Rice with Moru curry and Achaar.
  • Lastly Sharkara varatti (jaggary coated chips) and banana, fold the plantain leaf.


NUTRITIONAL ASPECT OF KERAL SADYA

The flavors; of our taste (Shadrasam) supplements our body constituting of the five elements (Panchaboodha).  Kerala sadya is scientifically formulated to complement the flavors of our taste and supply nutrition to our body.  Rice is rich in carbohydrate supplies energy, ghee and parippu provides protein.  Sambar is vegetable soup.  Kalan soothes the stomach and reduces acidity.   Rasam stimulates the production of digestive juices.  Moru curry clears and clean the Meridian channels of the body and soothes the stomach.  Pappad and salt supports to maintain the sodium ion balance.  Avial gives strength and the fiber in avail supports digestion.  Achaar stimulates the taste buds supporting digestion.  Payasam rich with protein gives strength and energy for our body.
