Homemade Dishes - Vegetable Fried Rice

Vegetable Fried Rice





Vegetable fried rice is a very popular and simple dish.  Variation can be brought to this dish by adding egg to make egg fried rice or you can add chicken, meat etc.  The good thing about vegetable fried rice is no side dish needed

Ingredients

  • 4 cups of basmati rice
  • 1 tbsp each ginger and garlic mashed
  • 4 onions finely chopped
  • Garam masala – Cardamom 10 pods, Clove 6 nos., Black pepper 1tbsp, Cinnamon bark 4 small pieces, khas khas 1 tsp – crushed lightly
  • 3 tbsp cashew broken
  • 3 tbsp raisin (kismis)
  • 3 – 4 cups vegetables chopped (slantingly – carrot, beans, capsicum and green peas)
  • 3 tbsp ghee
  • Oil as required
  • Salt to taste

Preparation

Cook the rice with salt to taste, drain and spread it in a large pan to cool.  Rice should not be over cooked (5-6 minutes cooking).

Heat ghee in a pan, fry the cashew and raisin, set it aside.  In the same pan add sufficient oil, fry the chopped onions till golden brown and keep it with fried cashew.  Separate the  fried items into two halves.  Fry the garam masala and sprinkle in the rice. 

Sauté the vegetables, first carrot, beans, green peas and capsicum till the raw smell goes off.  Now add the mashed ginger garlic mix, sauté till you get a good aroma. 

Add by sprinkling the one half of the fried items and sauted vegetable mix evenly in the rice, mix well, gently but thoroughly.  Transfer the mix into a pan with lid, garnish with the other half of the fried item and warm it on low flame till the lid gets warm.
