Homemade Dishes - Chicken Biryani

Chicken Biryani




For this biryani we use cooked chicken curry pieces and gravy.

Ingredients

  • 4 cups Basmati rice
  • 10-15 pieces of chicken and gravy (Go To Chicken Curry Recipe)
  • Garam Masala – 10 pods cardamom, 6 cloves, 3 small pieces of cinnamon, 1 tbsp black pepper, 1 tsp khas khas (crush it lightly)
  • 1 tbsp each ginger and garlic mashed
  • 4 onions sliced
  • 3 tbsp cashew broken
  • 3 tbsp raisin (kismis)
  • 3 tbsp ghee
  • Oil as required
  • Salt to taste

Preparation

Cook the rice with salt to taste, drain and spread it in a large pan to cool.  Rice should not be over cooked (5-6 minutes cooking).

Heat ghee in a pan, fry the cashew and raisin, set it aside.  Fry the garam masala and sprinkle in the rice. In the same pan add sufficient oil, fry the chopped onions till golden brown and keep it with fried cashew.    Fry the chicken pieces set it aside. 

Temper the mashed ginger garlic mix.  Add some chicken masala and saute’, add the chicken gravy and heat.  There should be one cup of thick gravy.

Take a pan with lid; apply little ghee inside the pan.  Spread a layer of masala mixed rice, place 4 or 5 pieces of fried chicken, sprinkle a thin layer of fried items and pour little gravy.  Continue this to make two or three layers and on the top garnish with the fried items.  Now close the lid and bake it on low flame.


Serve hot chicken biryani with salad, pappad and pickle.  Go To RECIPES
