Sambar
Sambar is a vegetable stew based on broth made with thuvaraparippu and
tamarind. Sambar is a very popular
southern Indian dish, varies its taste from state to state.
Ingredients
- ½ cup thuvaraparippu
- ½ piece cucumber
- 2 lady’s finger (okra)
- 1 brinjal
- 3 drumsticks
- 2 medium size potatoes
- 2-3 raw banana/plantain fruit
- 2 colocasia (taro)
- Small piece snake gourd
- 1 onion
- 2 tomatoes
- Salt as required
- Water to cover veggies
Seasoning
- 2-4 dried red chilli
- ¼ tsp mustard seed
- 3-4 shallots (chuvanna ulli)
- 2 stalks of curry leaves
- 4-5 tbsp sambar powder (follow the instruction based on brand)
- Oil as required
Preparations
Clean the veggies and cut to same size.
Add thuvaraparippu, veggies, turmeric powder, tamarind and salt to taste
in pressure cooker; pour water to cover the veggies. Cook till one whistle, turn of the flame and
wait till pressure settles.
Mean while heat oil in a pan, add mustard seed wait to crackle, then
add shallot sauté till golden brown and add broken red chilli, sambar powder
and curry leaves, and temper. Open the cooker
and add the seasonings and boil. Sambar
