Avial
Avial is a thick mixture of vegetables and coconut; seasoned with curry
leaves in oil.
Ingredients
Vegetables
- 1-2 raw plantain fruit (nedrakka)
- 2-3 raw banana (vazhakka)
- A small piece yam (chena)
- A small piece snake gourd (padavalanga)
- A small piece cucumber (vellarikka)
- 2-3 drum stick (muringakka)
- 1 brinjal
- 3-4 green chillies
- ½ tsp chilli powder
- ¼ tsp turmeric powder
- Salt as required
Masala mix
- ½ coconut grated
- 5-6 shallots (chuvanna ulli)
- 4 pods garlic
- 1 tsp cumin seed powder (jeera)
- 2 stalks curry leaves
- 1 cup fresh curd/ Mango pieces for taste
- 3 tbsp coconut oil
Preparation
Clean all the veggies and cut into same sized pieces and set aside the
brinjal pieces. Slice the green chillies
and keep with the veggies. In a pan heat
the coconut oil and temper the chilli powder.
Pour one cup of water into the pan and add the rest of the veggies and
salt to taste. When partially cooked add
the brinjal and the green chilles, wait till cooked.
Make a coarse paste of the masala mix items and add to the cooked
veggies, add the curry leaves and mix well.
When the veggies masala mix starts steaming add the curd/raw mango and
keep on low flame (take care that the mix not to boil). When the mix starts steaming the tasty avail
is ready. Top up the avail with little
coconut oil. Yummy…..Go To KERALA FEAST
