Homemade Dishes - Olan

Olan

Olan is a preparation of pumpkin, ash gourd with coconut milk.

Ingredients
  • 1 cup ash gourd (kumblanga)
  • 1 cup pumpkin (matthan)
  • 3-4 green chillies
  • ½ cup coconut milk thick
  • 1 cup coconut milk thin
  • ½ cup cow pea (vanpayar)
  • 1tbsp coconut oil
  • Salt as required

Preparation

Soak the cow pea over night.  Cook the cow pea and set it aside.  Extract the coconut milk both thick and thin from half coconut and set aside.


Peel, clean and chop the ash gourd and pumpkin into thin medium slices.  Cook the veggies with salt to taste and slit green chillies in thin coconut milk.  When the veggies cooked, add the thick coconut milk, cooked cow peas and heat, do not boil.  Add curry leaves and pour the raw coconut oil so that it should spread all over on the top.  Delicious olan is ready to serve.  Go To KERALA FEAST
