Koottukari
A mixed vegetable curry with coconut, which tastes hot and sweet served
in sadya.
Ingredients
- 1 plantain fruit (nedrakka)
- Small piece yam (chena)
- Small piece cucumber (vellarikka)
- Small piece ash gourd (kumblanga)
- Small piece pumpkin (matthan)
- ¼ cup kadala parippu (split chickpea)
- ¼ tsp turmeric powder
- Salt to taste
Masala mix
- ½ coconut grated
- ½ tsp cumin seed powder (jeera)
- 2-3 green chillies
- 2-3 shallot (chuvanna ulli)
Seasoning
- ½ tsp mustard seed
- 2 stalks curry leaves
- Oil as required
- 2 dried red chillies
- ½ coconut grated (roasted)
Preparation
Cook the chopped veggies and kadala parippu with turmeric powder and
salt to taste. Grind the masala mix to a coarse paste.
In a pan heat oil and add the mustard seed, wait till it crackles. Temper the curry leaves and dried red
chilli. Add the cooked veggies and
masala paste, sauté the mix. Top up with
roasted coconut – delicious koottukari ready. Go To KERALA FEAST
