Narrenga Achaar (Pickle)
Narrenga achaar is the spicy pickle of Lemon.
Ingredients
- 15 Lemons (narrenga)
- 2-3 tbsp salt
- 1-2 tbsp sugar
Item to fry
- 3-4 green chillies
- 8-12 pods garlic
- 4-5 inch size ginger (diced)
Seasoning
- ½ tsp mustard seed
- 2 stalks curry leaves
Masala mix
- ½ tsp fenugreek (uluva)
- ½ tsp turmeric powder
- ¼ tsp asafoetida (kayam)
- 1 tbsp chilie powder
- ¼ cup sesame oil (nallena)
- ¼ cup vinegar
- Salt to taste
Preparation
Take water in a pan and add the lemons, salt (2-3 tbsp) and sugar
(1-2tbsp). Boil the water till the rind becomes
tender. Remove the water and set aside
the lemons to dry. Cut all the lemons
into quarter (four equal) sized pieces.
In a pan heat sesame oil and fry, the items to fry. Set aside the fried green chillies, ginger
and garlic. Add mustard seed into the
same oil and wait to crackle, temper curry leaf also. Add the balance sesame oil into the pan,
sauté the masala mix and set it aside to cool off. To the sautéed masala mix add the fried items,
seasoning and salt to taste, blend well.
Add chopped lemons and vinegar into the pickle masala mix stir well. Your tasty narrenga achaar ready. Go To KERALA FEAST
